A comforting slow-cooked meal of tender chicken and buttery potatoes infused with garlic and Parmesan.

  • 4 boneless, skinless chicken breasts
  • 1 pound baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place the halved baby potatoes at the bottom of the crockpot.
  2. Season the chicken breasts generously with salt, pepper, and Italian seasoning.
  3. Layer the seasoned chicken breasts on top of the potatoes.
  4. In a bowl, whisk together the chicken broth, heavy cream, Parmesan cheese, and minced garlic until well combined.
  5. Pour the creamy mixture evenly over the chicken and potatoes.
  6. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  7. Once done, serve topped with the creamy sauce and a sprinkle of fresh parsley.

Notes

For a richer sauce, add a splash of white wine. Substitute chicken thighs for juicier bites. Consider adding vegetables like carrots or green beans for more variety.
