A comforting and hearty soup made with ground beef, beans, and vibrant vegetables, perfect for gathering with family and friends.

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro

Instructions

  1. Sautéing the beef and aromatics: In a skillet over medium heat, cook the ground beef until it browns, combining it with the chopped onion and minced garlic. Drain excess fat.
  2. Transferring to the crockpot: Once the beef is perfectly cooked, transfer the mixture into your trusty crockpot.
  3. Mixing in the beans and veggies: Add in the drained black beans, kidney beans, corn, and diced tomatoes.
  4. Adding the broth and seasonings: Pour in the beef broth, and sprinkle the chili powder and cumin over the mixture. Season with salt and pepper to taste.
  5. Stirring to combine: Gently stir everything to combine well.
  6. Cooking to perfection: Cover the crockpot and choose to cook on low for 6-8 hours or on high for 3-4 hours.
  7. Serving the delicious soup: Once cooking time is up, ladle the soup into bowls and add your favorite toppings.

Notes

For thicker soup, mash some beans or add instant potato flakes. This soup can be made a day ahead and tastes better the next day.
