A warm and creamy chicken parmesan soup made in a slow cooker, perfect for chilly days.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Crusty bread for serving

Instructions

  1. Combine the chicken, chicken broth, chopped onion, minced garlic, Italian seasoning, salt, and pepper in a slow cooker. Stir gently to mix.
  2. Cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and tender.
  3. Shred the chicken with two forks, then return it back into the slow cooker.
  4. Stir in the heavy cream and grated parmesan cheese until well combined.
  5. Let it cook for an additional 30 minutes to meld the flavors together.
  6. Serve hot with crusty bread for dipping.

Notes

For vibrant flavors, sauté garlic and onion before adding to the slow cooker. Prep ingredients the night before for convenience.
