Delicious and vibrant shrimp spring rolls wrapped in delicate rice paper, perfect for gatherings and customizable with fresh ingredients.

  • 1 lb Shrimp
  • 8 Rice paper wrappers
  • 2 cups Lettuce, shredded
  • 1 cup Carrots, sliced into thin strips
  • 1 cup Cucumber, sliced into thin strips
  • ½ cup Mint leaves
  • ½ cup Cilantro leaves
  • Dipping sauce (e.g., hoisin or peanut sauce)

Instructions

  1. Cook the shrimp in a pot of gently boiling water for 3-5 minutes until pink and opaque, then drain and cool.
  2. Prepare the vegetables by slicing the lettuce, carrots, and cucumber into thin strips.
  3. Soften the rice paper wrappers by dipping them in warm water for about 15-20 seconds until pliable.
  4. Layer your fillings on the softened wrapper, starting with lettuce, followed by shrimp, carrots, cucumber, mint, and cilantro.
  5. Roll the wrapper tightly from the bottom up, folding in the sides as you go.
  6. Serve the spring rolls with your choice of dipping sauce.

Notes
