Ingredients

Scale
  • 2 large onions, sliced into thin rings
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 cup breadcrumbs (preferably panko)
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • Vegetable oil for frying

Instructions

  1. Slice the onions into thin rings, about 1/4 inch thick, and set aside.
  2. Soak the onion rings in buttermilk for at least 30 minutes.
  3. In a shallow dish, mix flour, garlic powder, onion powder, paprika, black pepper, and salt.
  4. In another dish, combine breadcrumbs and Parmesan cheese.
  5. Heat vegetable oil in a frying pan to 350°F (175°C).
  6. Coat each onion ring in the flour mixture, dip in buttermilk, then coat with breadcrumbs and Parmesan.
  7. Fry the onion rings in oil for 2-3 minutes per side until golden brown and crispy.
  8. Remove and place on paper towels to drain excess oil, serve hot.

Notes

For extra crunch, consider double dipping the onion rings. Avoid overcrowding the pan for the best frying results.
