A comforting creamy sausage soup filled with rich flavors and fresh vegetables, perfect for chilly evenings.

Ingredients

  • 1 pound sausage (Italian or breakfast sausage)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 3 celery stalks, diced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 2 cups diced potatoes
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Brown the sausage in a large pot over medium heat until seared and fat begins to flow.
  2. Add the chopped onion, garlic, carrots, and celery, cooking until softened and fragrant.
  3. Stir in the chicken broth and diced potatoes, bringing to a boil.
  4. Reduce heat and let it simmer for about 15 minutes or until potatoes are tender.
  5. Add the heavy cream, seasoning with salt and pepper to taste.
  6. Let it simmer for an additional 5 minutes.
  7. Serve hot, garnished with fresh parsley.

Notes

For a lighter version, substitute half of the heavy cream with milk. Leftovers can be stored in the fridge for up to 3 days.
