A comforting and creamy dish featuring orzo pasta and sautéed mushrooms, perfect for busy weeknight dinners.

  • 2 cups vegetable broth
  • 1 cup mushrooms, sliced
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Sauté the mushrooms: In a large skillet, heat olive oil over medium heat. Add the sliced mushrooms and cook until browned, about 5 minutes. Stir in minced garlic and cook for another minute.
  2. Add the orzo: Add the orzo pasta to the skillet and stir to coat with the oil and mushrooms.
  3. Pour in the broth: Pour in the vegetable broth and bring to a boil. Reduce heat to a simmer and cover. Cook for about 10-12 minutes, or until the orzo is tender and liquid is absorbed.
  4. Create the creamy sauce: Stir in the heavy cream and grated Parmesan cheese until the sauce is creamy. Season with salt and pepper to taste.
  5. Garnish and serve: Serve warm, garnished with chopped parsley.

Notes

Consider adding different types of mushrooms or fresh herbs for extra flavor. Store leftovers in an airtight container for up to 3 days.
