  • 1 cup wild rice
  • 8 ounces mushrooms, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced chicken and cook until browned.
  2. Add onions and garlic, cooking until onions are translucent.
  3. Stir in mushrooms and cook until softened.
  4. Pour in the chicken broth and bring to a boil.
  5. Add wild rice and reduce heat, simmering for 30-40 minutes until rice is cooked.
  6. Stir in heavy cream and season with salt and pepper.
  7. Serve hot, garnished with parsley.
