A delightful twist on the classic Italian sandwich, this creamy chicken salad is perfect for picnics or light dinners.

  • 2 cups cooked chicken, shredded
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1/4 cup red onion, finely chopped
  • 1/4 cup celery, diced
  • 1/4 cup roasted red peppers, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Lettuce leaves for serving
  • Bread or wrap for serving (optional)

Instructions

  1. Combine the shredded chicken, mayonnaise, Greek yogurt, and Dijon mustard in a large bowl. Mix well.
  2. Add the finely chopped red onion, diced celery, and roasted red peppers to the bowl.
  3. Sprinkle in the Italian seasoning, along with salt and pepper. Stir until evenly distributed.
  4. Serve your salad atop lettuce or in crusty bread/wrap for a heartier meal.
