A healthy twist on the classic Caesar dressing, using Greek yogurt for a rich and creamy texture.

Ingredients

  • 1 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons red wine vinegar
  • 2 teaspoons Worcestershire sauce
  • 1 clove garlic, minced
  • 1 teaspoon anchovy paste (or 2 anchovy fillets, minced)
  • 1/4 cup freshly grated Parmesan cheese
  • Salt and black pepper to taste
  • 12 tablespoons water (optional, for thinning)

Instructions

  1. In a medium mixing bowl, combine the Greek yogurt and mayonnaise. Whisk them together until the mixture is smooth and creamy.
  2. Add the Dijon mustard, red wine vinegar, and Worcestershire sauce to the bowl. Whisk again to incorporate these ingredients well.
  3. Add the minced garlic and anchovy paste (or minced anchovy fillets) to the mixture. Stir until everything is well combined.
  4. Gradually mix in the freshly grated Parmesan cheese, ensuring it’s evenly distributed throughout the dressing.
  5. Taste the dressing and season with salt and black pepper according to your preference. Start with a small pinch of salt and pepper and add more as needed.
  6. If you prefer a thinner consistency, add water, one tablespoon at a time, and whisk until you achieve your desired texture.
  7. Once fully blended, transfer the dressing to an airtight container. Refrigerate for at least 30 minutes to allow the flavors to meld.
  8. Serve over your favorite greens or use as a dip for vegetables.

Notes

Store in an airtight container in the refrigerator for up to one week. Shake well before using.
