A delightful bread featuring the tangy taste of cranberries and the crunchy texture of walnuts, perfect for breakfast or as an afternoon snack.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup orange juice
  • 1 cup fresh or dried cranberries
  • 1 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan generously.
  2. Combine the flour, sugar, baking soda, and salt in a mixing bowl.
  3. Cream the softened butter and sugar together until light and fluffy.
  4. Mix in the eggs one at a time, followed by the orange juice until well combined.
  5. Combine the dry mixture with the wet ingredients, mixing gently until just combined.
  6. Fold in the cranberries and walnuts.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-65 minutes, or until a toothpick inserted comes out clean.
  9. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

Optional to substitute walnuts with pecans or leave them out for a nut-free version.
