  • 17.5 ounces sugar cookie mix
  • 3 tablespoons all-purpose flour
  • ½ cup quick oats
  • ½ cup salted butter, melted
  • 1 large egg, beaten
  • â…” cup white sugar
  • 4 1/2 teaspoons cornstarch
  • 2 tablespoons sweetened cranberry juice
  • 4 cups cranberries (fresh or frozen)

Instructions

  1. Preheat the oven to 350°F. Line a 9×13 inch baking dish with parchment paper or spray it with cooking oil.
  2. In a large mixing bowl, combine sugar cookie dough mix, all-purpose flour, and quick oats. Add the melted butter and mix until combined.
  3. Beat the egg in a small bowl and add it to the mixture. Mix until a crumbly dough forms.
  4. Press about 3/4 of the dough into the bottom of the prepared baking dish.
  5. In a second bowl, mix white sugar, cornstarch, and cranberry juice. Fold in the cranberries until well coated.
  6. Spoon the cranberry mixture evenly over the dough in the baking dish. Crumble the remaining dough on top.
  7. Bake for 35-40 minutes until the topping is golden brown and the filling is bubbly.
  8. Let cool completely in the pan before slicing into squares.

Notes

Store leftover bars in an airtight container for up to four days or refrigerate for up to a week. Freeze for longer storage, separating with parchment paper.
