A hearty and creamy chicken noodle soup that brings warmth and comfort to chilly days.

Ingredients

  • 2 cups cooked chicken, shredded
  • 8 oz egg noodles
  • 1 cup cream cheese
  • 1 cup cheddar cheese, shredded
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the chicken broth in a large pot over medium heat until it begins to simmer gently.
  2. Add the diced onion, minced garlic, sliced carrots, and celery to the broth. Cook until softened, about 5-7 minutes.
  3. Stir in the egg noodles and let them cook according to package instructions, usually around 7-10 minutes, until al dente.
  4. Incorporate the shredded chicken, cream cheese, and cheddar cheese. Stir until melted and well combined.
  5. Add salt and pepper to taste.
  6. Serve the soup warm, garnished with freshly chopped parsley.

Notes

Pairs well with crusty bread or a light salad. Can be frozen without cheese for future use.
