A delightful blend of flavors inspired by egg rolls, served in a soothing, hearty broth.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound ground pork
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 2 teaspoons fresh ginger, grated
  • 4 cups chicken broth
  • 4 cups coleslaw mix
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Sliced green onions for garnish
  • Sesame seeds for garnish
  • Chopped fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the ground pork and sauté until browned, about 5-7 minutes.
  3. Stir in the diced onion, minced garlic, and grated ginger, cooking until onions are translucent, about 2-3 minutes.
  4. Pour in the chicken broth and scrape the pot to deglaze.
  5. Add the coleslaw mix and stir to combine.
  6. Mix in the soy sauce, sesame oil, rice vinegar, and red pepper flakes (if using).
  7. Bring the soup to a gentle simmer, then reduce heat and let it cook for 10-15 minutes.
  8. Season with salt and pepper to taste.
  9. Serve in bowls, garnished with green onions, sesame seeds, and cilantro.

Notes

Feel free to substitute proteins and vegetables as desired. Leftovers can be stored in an airtight container for up to 3 days.
