A robust and hearty blend of ground beef, colorful veggies, and savory spices, perfect for warming you up on chilly evenings.

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 can corn, drained
  • 1 can kidney beans, drained
  • 1 bell pepper, chopped
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a large pot over medium heat until fully cooked.
  2. Add the chopped onion and minced garlic, cooking until the onion is soft and translucent.
  3. Stir in the diced tomatoes, drained corn, kidney beans, and bell pepper.
  4. Add the beef broth and stir well.
  5. Season with chili powder, cumin, salt, and pepper to taste.
  6. Bring to a boil, then reduce heat and let simmer for 30 minutes.
  7. Ladle into bowls and serve hot.

Notes

Pairs well with crusty bread or cornbread. Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
