Instructions

  1. Preheat your grill to medium-high heat.
  2. Grill the corn for about 10-15 minutes, turning occasionally, until beautifully charred.
  3. Mix together the mayonnaise, lime juice, and chili powder in a small bowl.
  4. Coat the grilled corn with the creamy mayo mixture.
  5. Sprinkle the crumbled cotija cheese over the warm corn and add salt to taste.
  6. Garnish with fresh cilantro and serve with lime wedges.

Notes

For perfectly grilled corn, soak the ears in water for 20 minutes beforehand to prevent drying out. You can substitute cotija cheese with feta or Parmesan if needed.
