A moist and tender coffee cake with a rich buttery flavor and a sweet streusel topping, perfect for enjoying with coffee or tea.

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  4. Whisk together the flour, baking powder, baking soda, and salt in another bowl.
  5. Combine the dry ingredients with the butter mixture, alternating with the buttermilk, starting and ending with dry ingredients.
  6. Mix the brown sugar, cinnamon, and nuts (if using) for the streusel topping.
  7. Pour half of the batter into the prepared pan, sprinkle half of the streusel mixture, then add the remaining batter and top with the remaining streusel.
  8. Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  9. Let the cake cool slightly before serving.

Notes

Serve with whipped cream or vanilla ice cream. Store leftovers in an airtight container for up to 3 days at room temperature or up to a week in the fridge.
