Delightfully chewy coconut squares with a tropical twist, perfect for holiday celebrations.

Ingredients

  • 2 cups shredded coconut
  • 1 cup sweetened condensed milk
  • 1/2 cup coconut rum
  • 1/4 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup graham cracker crumbs
  • 1 cup chocolate chips (for topping, optional)

Instructions

  1. Mix the shredded coconut, sweetened condensed milk, melted butter, rum, vanilla extract, and salt until well combined.
  2. Stir in the graham cracker crumbs until thick and sticky.
  3. Press the mixture into a greased 8×8 inch baking dish evenly.
  4. Sprinkle chocolate chips on top and press gently, if desired.
  5. Refrigerate for at least 2 hours or until set.
  6. Cut into squares and serve.

Notes

Store leftovers in an airtight container in the refrigerator for up to a week or freeze for up to a month.
