Healthy and delicious cookies made with chickpeas and cocoa. Perfect for a guilt-free snack!

Ingredients

  • 1 ripe banana, mashed
  • 1 cup chickpeas, drained and rinsed
  • 1/4 cup cocoa powder
  • 1/2 cup oats
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: chocolate chips or nuts

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the mashed banana, chickpeas, cocoa powder, oats, vanilla extract, and salt in a food processor. Blend until smooth.
  3. If using, stir in chocolate chips or nuts.
  4. Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
  5. Bake for 10-12 minutes or until set.
  6. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack. Enjoy your healthy cookies!

Notes

Store the cookies in an airtight container at room temperature for up to three days. Freeze for longer storage.
