A beloved Southern dessert that combines creamy vanilla pudding, ripe bananas, and crunchy vanilla wafers for a nostalgic experience.

  • 1 cup vanilla wafers
  • 4 ripe bananas, sliced
  • 1 cup sugar
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups milk
  • 3 egg yolks, beaten
  • 2 teaspoons vanilla extract
  • 1 cup whipped cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the sugar, flour, and salt in a saucepan.
  3. Gradually whisk in the milk and cook over medium heat until thick.
  4. Temper the egg yolks by mixing with some hot mixture, then add back to the saucepan.
  5. Add the vanilla extract and cook for 2 more minutes.
  6. Layer the vanilla wafers, bananas, and pudding in a serving dish.
  7. Garnish with whipped cream on top.
  8. Chill in the refrigerator for at least 2 hours before serving.

Notes

For richer flavor, substitute half-and-half for whole milk, and ensure bananas are ripe for optimal sweetness.
