Delightful classic shortbread cookies, perfect for pairing with coffee or tea.

Ingredients

  • 1 cup (226g) unsalted butter, softened
  • 1/2 cup (60g) powdered sugar
  • 1/4 cup (30g) cornstarch
  • 1 3/4 cups (220g) all-purpose flour
  • 1/2 teaspoon sea salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Cream the butter and powdered sugar in a large bowl until light and fluffy.
  3. Add the vanilla extract and mix well.
  4. Combine the cornstarch, all-purpose flour, and sea salt in a separate bowl.
  5. Mix the dry ingredients into the butter mixture until it forms a crumbly dough.
  6. Shape the dough into a parchment-lined baking dish, pressing it flat.
  7. Bake for 20 minutes until edges are lightly golden.
  8. Cool for a few minutes, cut along the scores, and let cool completely.
  9. Serve and enjoy with your favorite beverage.
