A rich, creamy cheesecake with a subtly caramelized top, infused with citrus zest and loaded with fresh berries, perfect for gatherings.

  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 3 large eggs, room temperature
  • 2 teaspoons lemon zest or orange zest
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 2 cups fresh raspberries or blackberries

Instructions

  1. Preheat the oven to 450°F and prepare a 7-inch springform pan with parchment paper.
  2. In a large mixing bowl, beat the cream cheese and sugar together until smooth.
  3. Mix in the vanilla extract, citrus zest, and salt.
  4. Incorporate the heavy cream until smooth.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Sprinkle the flour over the batter and mix gently.
  7. Fold in the fresh berries.
  8. Pour the batter into the prepared pan and bake for 20–25 minutes until golden brown.
  9. Cool completely at room temperature, then refrigerate overnight.
  10. Carefully remove from the pan, slice, and serve.

Notes

Serve with raspberry coulis or whipped cream. Great paired with herbal tea or white wine. Store leftovers in the fridge for up to 5 days.
