Experience the vibrant flavors of marinated flank steak, fresh cilantro, and zesty lime in these delicious bowls that bring the family together.

Ingredients

  • 1 lb flank steak
  • 1/4 cup fresh lime juice
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • Additional cilantro for garnish

Instructions

  1. In a bowl, combine lime juice, chopped cilantro, minced garlic, ground cumin, salt, and pepper to create the marinade.
  2. Marinate the flank steak in the marinade for at least 30 minutes, up to a couple of hours.
  3. Preheat your grill or skillet over medium-high heat.
  4. Cook the marinated flank steak for 5-7 minutes on each side for medium-rare doneness.
  5. Let the steak rest for a few minutes before slicing it thinly against the grain.
  6. In serving bowls, layer cooked rice, black beans, corn, sliced steak, avocado, and cherry tomatoes.
  7. Garnish with additional cilantro and serve with pride.

Notes

Feel free to substitute flank steak with chicken or tofu for different protein options. To save time, prepare rice ahead of time.
