This Chocolate Raspberry Tart features a decadent chocolate ganache balanced with vibrant raspberries, creating a harmonious dessert experience.

  • 1 tart shell (store-bought or homemade)
  • 8 oz dark chocolate, chopped
  • 1 cup heavy cream
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh raspberries
  • Mint leaves for garnish (optional)

Instructions

  1. Preheat the oven and bake the tart shell according to package directions if using store-bought, or prepare your homemade tart shell. Let it cool completely.
  2. Simmer the heavy cream in a saucepan until it just begins to simmer. Remove from heat.
  3. Stir in the chopped dark chocolate until completely melted and smooth. Add sugar and vanilla extract.
  4. Pour the chocolate ganache into the cooled tart shell and smooth the top with a spatula.
  5. Refrigerate the tart for at least 2 hours or until firmly set.
  6. Top the tart with fresh raspberries and garnish with mint leaves if desired. Slice and serve.

Notes

For a perfectly smooth ganache, ensure your chocolate is finely chopped. You can add orange zest or espresso powder for a flavor twist.
