A delightful fusion of rich chocolate cake and creamy chocolate mousse, perfect for coffee lovers.

  • 1 3/4 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup brewed coffee, cooled
  • 1 teaspoon vanilla extract
  • 1 cup chocolate mousse (store-bought or homemade)
  • 1 cup chocolate buttercream icing
  • Chocolate shavings for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, ensuring an easy release of your baked masterpiece.
  2. In a mixing bowl, sift together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt.
  3. Cream together the granulated sugar, brown sugar, and softened butter until light and fluffy.
  4. Add the eggs, one at a time, mixing well after each addition.
  5. Stir in the cooled brewed coffee and vanilla extract until combined.
  6. Gradually mix in the sifted dry ingredients until just combined.
  7. Divide the batter evenly between the prepared pans and smooth the tops.
  8. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
  10. Once cooled, place one cake layer on a serving plate and spread the chocolate mousse over it, then top with the second cake layer.
  11. Ice the top and sides of the cake with chocolate buttercream icing.
  12. Add chocolate shavings as garnish.
  13. Slice and serve to enjoy!

Notes

For a different flavor, try using a raspberry or espresso mousse instead of chocolate mousse.
