Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 8 ounces dark chocolate, chopped
  • Fresh berries for topping

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  2. Mix together the flour, cocoa powder, baking powder, and salt in a bowl.
  3. Cream the softened butter and granulated sugar until fluffy, then add eggs one at a time and mix in the vanilla.
  4. Combine the dry ingredients with the wet mixture until just mixed, then pour into the prepared pan.
  5. Bake for 25-30 minutes or until a toothpick comes out clean. Cool in the pan for a few minutes, then transfer to a wire rack.

  7. Assemble by spreading the mousse over the cooled cake and refrigerate for at least 2 hours.
  8. Garnish with fresh berries before serving.
