Delicious chocolate cupcakes topped with creamy mint chocolate chip frosting, perfect for any occasion.

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup whole milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup boiling water
  • 1/2 cup mint chocolate chips
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tablespoons heavy cream
  • 1 teaspoon peppermint extract
  • 1/4 cup mint chocolate chips for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the egg, milk, vegetable oil, and vanilla extract to the dry ingredients and mix until well combined.
  4. Carefully stir in the boiling water until the batter is smooth. Fold in the mint chocolate chips.
  5. Fill each cupcake liner about 2/3 full with batter and bake for 18-20 minutes.
  6. Allow the cupcakes to cool completely on a wire rack.
  7. For the frosting, beat the softened butter until creamy, then gradually add the powdered sugar, mixing until smooth.
  8. Add the heavy cream and peppermint extract, and beat until light and fluffy.
  9. Frost the cooled cupcakes with the mint chocolate chip frosting and garnish with additional mint chocolate chips.

Notes

Use room temperature ingredients for better mixing. Feel free to experiment with different flavors.
