A delightful combination of rich, fudgy brownies topped with a chewy cookie layer, these Chocolate Chip Cookie Brownie Bars—or ‘brookies’—are a perfect treat for any occasion.

Ingredients

  • 3/4 cup Butter (softened)
  • 1 cup Sugar
  • 1/3 cup Brown Sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Unsweetened Cocoa Powder
  • 1 cup All-Purpose Flour
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1/2 cup Chocolate Chips (optional)
  • 1/2 cup Butter (softened)
  • 3/4 cup Brown Sugar
  • 1/4 cup Sugar
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 1 1/4 cups All-Purpose Flour
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 cup Chocolate Chips
  • Milk chocolate chunks (to sprinkle on top, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the butter, granulated sugar, and brown sugar for 3 to 4 minutes until light and fluffy.
  3. Add the eggs one at a time, mixing well after each, and stir in the vanilla extract.
  4. Combine gradually the cocoa powder, flour, baking soda, and salt to the wet ingredients.
  5. Fold in the optional chocolate chips.
  6. Pour the brownie batter into a 9 x 13 inch aluminum pan.
  7. Cream together the butter, brown sugar, and granulated sugar for the cookie layer for 3 to 4 minutes until fluffy.
  8. Add the egg and vanilla extract, mixing for an additional minute.
  9. Stir in the flour, baking soda, and salt for the cookie mixture.
  10. Fold in the chocolate chips.
  11. Drop spoonfuls of cookie dough evenly over the brownie batter.
  12. Bake for 28 to 32 minutes or until the edges start to set.
  13. Sprinkle milk chocolate chunks on top during the last 5 minutes of baking if desired.
  14. Cool completely before cutting into bars.

Notes

These bars are best served warm or at room temperature. Store leftovers in an airtight container.
