A guilt-free treat that marries the richness of chocolate with the wholesome goodness of oats, perfect for breakfast or brunch.

Ingredients

  • 2 cups rolled oats
  • 1/3 cup cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • 1/3 cup maple syrup
  • 1/4 cup coconut oil
  • 1 1/2 cups almond milk
  • 1 tsp vanilla extract
  • 1 cup chocolate chips (plus extra for sprinkling on top)
  • Optional toppings: peanut butter, whipped cream, maple syrup, nuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a large mixing bowl, stir together the rolled oats, cocoa powder, baking powder, and salt.
  3. In a separate medium bowl, whisk the eggs, almond milk, maple syrup, coconut oil, and vanilla extract until blended.
  4. Pour the wet mixture into the dry ingredients and stir until combined.
  5. Gently fold in the chocolate chips.
  6. Pour the batter into the prepared baking dish and sprinkle additional chocolate chips on top.
  7. Bake for 45-50 minutes or until a toothpick inserted in the center comes out mostly clean.
  8. Allow to cool for about 10 minutes before serving. Add optional toppings as desired.

Notes

Store in an airtight container for up to 5 days in the refrigerator, or freeze for up to 2 months.
