A delightful dish combining sweet and spicy chipotle honey chicken thighs with creamy smoked gouda mashed potatoes, perfect for autumn gatherings.

Ingredients

  • 4 chicken thighs
  • 1/4 cup honey
  • 2 tablespoons chipotle sauce
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 ounces smoked gouda cheese, shredded
  • 2 tablespoons butter

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix the honey and chipotle sauce.
  3. Season the chicken thighs with salt and pepper.
  4. Coat the chicken thighs with the honey-chipotle mixture.
  5. Place the chicken in the preheated oven and bake for 25-30 minutes.
  6. While the chicken is baking, boil the potatoes in a pot of salted water until tender.
  7. Drain the potatoes and return them to the pot.
  8. Add milk, smoked gouda, and butter to the potatoes, then mash until creamy.
  9. Serve the chicken thighs over the smoked gouda mashed potatoes and enjoy!

Notes

Let the chicken rest for a few minutes after baking for juicier thighs. Adjust chipotle sauce for desired heat.
