A quick and delightful Chicken Lo Mein that combines tender chicken, crisp vegetables, and savory noodles for a perfect weeknight dinner.

Ingredients

  • 34 boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 carrots (thinly sliced)
  • 2 green onions (chopped)
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic

Instructions

  1. Gather and chop all the ingredients.
  2. Cook the lo mein noodles according to the package instructions until al dente.
  3. Heat a large skillet or wok over medium-high heat, add sesame oil, and sauté chicken until fully cooked.
  4. Stir-fry the bell peppers, carrots, and green onions for 3-4 minutes.
  5. Return the cooked chicken to the skillet and add noodles, soy sauce, sesame oil, and garlic. Toss to combine.
  6. Plate the Chicken Lo Mein and serve hot, optionally drizzling with extra soy sauce.
