A comforting and flavorful Chicken Fried Rice recipe that’s quick to prepare and easily customizable.

Ingredients

  • 2 cups cooked rice
  • 1 cup cooked chicken, chopped
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Add the mixed vegetables to the skillet and sauté for 2-3 minutes.
  3. Push the vegetables to the side of the skillet and pour in the beaten eggs.
  4. Add the cooked chicken and the fluffy rice to the skillet.
  5. Pour the soy sauce over the mixture and stir well to combine.
  6. Cook for an additional 3-4 minutes, until everything is heated through.
  7. Season with salt and pepper, then stir in the sliced green onions before serving.

Notes

Use chilled rice, preferably day-old, to prevent mushiness. Customize with any vegetables or proteins you have on hand.
