Ingredients

Scale
  • 2 skinless, boneless chicken breasts
  • 3/4 teaspoon salt
  • 3/4 teaspoon ground black pepper
  • 3/4 teaspoon garlic powder
  • 1 tablespoon oil (like olive oil)
  • 8 ounces dry penne pasta
  • 1 1/2 cups croutons
  • 3 cups romaine lettuce, chopped
  • 3/4 cup Caesar dressing
  • 1/3 cup grated parmesan cheese

Instructions

  1. Season the Chicken: In a bowl, sprinkle the salt, pepper, and garlic powder over the chicken breasts.
  2. Sauté the Chicken: Heat a tablespoon of oil in a skillet over medium heat. Add chicken and cook for 8-10 minutes on each side until golden brown and fully cooked.
  3. Cube the Chicken: Once cooled, chop the chicken into tender cubes.
  4. Cook the Pasta: Follow package instructions for the penne pasta, then drain and set aside to cool.
  5. Assemble the Salad: In a large mixing bowl, combine chicken, cooked pasta, croutons, and romaine lettuce. Drizzle with Caesar dressing and sprinkle with parmesan cheese. Toss gently.
  6. Serve: Transfer the salad to a serving bowl and enjoy immediately.

Notes

For added flavor, marinate the chicken in the seasoning for a few hours before cooking. You can substitute pasta with zucchini noodles or cauliflower rice for a lower-carb option.
