A nostalgic and hearty casserole combining chicken, broccoli, and rice, topped with melted cheddar cheese.

  • 2 cups cooked chicken, diced
  • 2 cups broccoli florets
  • 1 cup uncooked rice
  • 1 can cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cooked chicken, broccoli, uncooked rice, cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper. Mix well until evenly combined.
  3. Transfer the mixture into a greased casserole dish, spreading it evenly.
  4. Sprinkle the shredded cheddar cheese generously on top.
  5. Cover the dish with foil and bake for 25 minutes.
  6. Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden.
  7. Let sit for a few minutes before serving.

Notes

For quicker preparation, use rotisserie chicken. Feel free to customize with different vegetables or cheeses.
