A comforting Chicken Broccoli Rice Casserole with tender chicken, bright green broccoli, fluffy rice, and gooey cheese that’s perfect for family dinners.

  • 2 cups cooked chicken, shredded
  • 2 cups broccoli florets, steamed
  • 1 cup cooked rice
  • 1 can cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, steamed broccoli, cooked rice, cream of mushroom soup, shredded cheddar cheese, milk, garlic powder, onion powder, salt, and pepper.
  3. Mix all the ingredients together until evenly combined.
  4. Grease a 9×13 inch casserole dish lightly.
  5. Pour the chicken and rice mixture into the greased casserole dish, spreading it out evenly.
  6. Sprinkle the optional breadcrumbs on top for added crunch.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is bubbly and golden brown.
  8. Allow to cool for a few minutes before serving.

Notes

For a healthier touch, consider using brown rice or quinoa. Feel free to swap broccoli for other veggies like cauliflower or spinach.
