Deliciously chewy cookies infused with maple syrup and cinnamon, perfect for fall.

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 cup pure maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped pecans or walnuts (optional)
  • Extra granulated sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-5 minutes using an electric mixer.
  3. Add the pure maple syrup, eggs, and vanilla extract to the butter-sugar mixture. Beat until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt until evenly blended.
  5. Gradually add the dry ingredients into the wet mixture, mixing on low speed until just combined. Be careful not to overmix.
  6. If using, gently fold in the chopped pecans or walnuts until evenly distributed.
  7. Using a cookie scoop or tablespoon, scoop out portions of dough and roll them into balls. Roll each ball in extra granulated sugar to coat.
  8. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden but the centers remain soft.
  9. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For extra deliciousness, serve warm with vanilla ice cream or alongside chai tea.
