Delicious cookies that capture the comforting flavors of French toast in a chewy, portable treat.

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup maple syrup
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract and maple syrup.
  4. Combine the flour, baking soda, cinnamon, and salt in another bowl.
  5. Add the dry ingredients to the wet mixture, mixing just until combined.
  6. Using a spoon, drop rounded tablespoons of dough onto the prepared baking sheet.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet before transferring to a wire rack.

Notes

Store in an airtight container for up to one week, or freeze for up to three months.
