Delicious and nutritious energy bites made with dried fruits and nuts, perfect for an energy boost.

Ingredients

  • 1 cup pitted dates
  • 1 cup dried cherries
  • 1 cup dried cranberries
  • 1 cup rolled oats
  • 1/2 cup nuts (e.g., almonds or walnuts)
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • Optional: 1/2 cup chocolate chips

Instructions

  1. In a food processor, combine the pitted dates, dried cherries, dried cranberries, and nuts. Pulse until finely chopped.
  2. Add the rolled oats, honey or maple syrup, vanilla extract, and salt. Pulse until the mixture is sticky and holds together.
  3. If using, mix in chocolate chips until evenly distributed throughout the mixture.
  4. Roll the mixture into small balls, about 1 inch in diameter, pressing firmly to ensure they hold their shape.
  5. Place the energy bites on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes until firm.
  6. Store the energy bites in an airtight container in the refrigerator for up to a week.

Notes

For longer storage, consider freezing them. They’ll stay good for up to three months.
