Crispy egg rolls filled with a delicious cream cheese and cherry filling, perfect for any gathering.

Ingredients

  • Oil suitable for frying
  • 4 ounces of cream cheese, softened to room temperature
  • 1 teaspoon of lemon zest
  • 3 tablespoons of granulated sugar
  • ½ teaspoon of lemon juice
  • 1 can of cherry pie filling
  • 8 egg roll wrappers (6x6 size recommended)

Instructions

  1. In a mixing bowl, combine the softened cream cheese, lemon zest, lemon juice, and granulated sugar. Beat until smooth and lump-free.
  2. Arrange the egg roll wrappers in a diamond shape and spoon the cream cheese mixture into the center of each.
  3. Top each cream cheese mixture with a spoonful of cherry pie filling.
  4. Dampen the edges of the wrappers with water, then fold and roll to seal tightly. Let them rest for 3-4 minutes.
  5. Preheat frying oil to 350°F and fry the egg rolls in small batches until golden brown and crispy.
  6. Drain on paper towels and serve warm, optionally dusted with powdered sugar.

Notes

These egg rolls can be served with vanilla ice cream or whipped cream for added indulgence. Store leftovers in an airtight container in the fridge for up to 2-3 days.
