Delicious cheesy taco cups made with biscuit dough, ground beef, and topped with fresh vegetables.

Ingredients

  • 450 grams ground beef
  • 1 package canned biscuit dough (approximately 8 biscuits, 340 grams total)
  • 28 grams taco seasoning (1 standard packet)
  • 100 grams cheddar cheese, hand shredded
  • Sour cream, to serve
  • Diced tomatoes, to serve
  • Shredded lettuce, to serve

Instructions

  1. Preheat your oven to 190°C and grease a standard muffin tin.
  2. Separate and split each biscuit horizontally to create thinner disks and press into the muffin tin.
  3. Heat a medium skillet and cook the ground beef until browned.
  4. Add taco seasoning and water as per the packet instructions and let it simmer.
  5. Stir in the shredded cheddar cheese until melted.
  6. Spoon the beef and cheese mixture into the biscuit cups.
  7. Bake for approximately 15 minutes until golden brown.
  8. Allow to cool slightly, then carefully lift cups from the muffin tin.
  9. Top with sour cream, diced tomatoes, and shredded lettuce.
  10. Serve warm and enjoy!

Notes

For a healthier version, use lean ground beef or turkey, and load up on fresh veggie toppings.
