A delicious and comforting cheesy chicken quesadilla bursting with flavor, perfect for casual gatherings or cozy family dinners.

  • 2 large flour tortillas
  • 1 cup cooked chicken, shredded
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/2 cup bell peppers, diced
  • 1/2 cup onion, diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Sour cream and salsa for serving

Instructions

  1. Sauté the veggies: Heat the olive oil in a skillet over medium heat. Add the diced onion and bell peppers, and sauté until soft, about 5 minutes.
  2. Combine chicken and vegetables: In a large bowl, mix the shredded chicken with the sautéed vegetables, and season with salt and pepper.
  3. Layer the tortilla: Place one tortilla in the skillet, and sprinkle half of the shredded cheese on one half of the tortilla.
  4. Add the chicken mixture: Spread the chicken mixture over the cheese, then sprinkle the remaining cheese on top.
  5. Grill the quesadilla: Fold the tortilla in half and cook until golden brown and crispy, about 3-4 minutes on each side.
  6. Cut and serve: Remove from the skillet, cut into wedges, and serve with sour cream and salsa.

Notes

For an extra crunchy finish, lightly spray the tortillas with cooking spray or brush them with more olive oil before crisping them in the skillet. Feel free to experiment with different ingredients and spices.
