A comforting dish combining tender chicken breasts and vibrant bell peppers, topped with melted mozzarella and Parmesan cheese.

  • 4 boneless skinless chicken breasts
  • 2 bell peppers (any color, thinly sliced)
  • 1 small onion (thinly sliced, optional)
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella (or a mozzarella-cheddar blend)
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a baking dish.
  2. Place the chicken breasts in the baking dish, drizzle with 1 tablespoon of olive oil, and season both sides with Italian seasoning, garlic powder, paprika, salt, and pepper.
  3. Toss the thinly sliced peppers and optional onion with the remaining olive oil and arrange them around the chicken.
  4. Bake uncovered for 20-25 minutes until the chicken’s internal temperature reaches 165°F (74°C).
  5. Sprinkle mozzarella and Parmesan cheese over the chicken and peppers, and return to the oven for another 3-5 minutes until melted.
  6. Garnish with fresh parsley and serve warm.

Notes

This dish pairs well with rice, pasta, or a refreshing side salad. Leftovers can be stored in an airtight container for up to 3 days.
