A fluffy and crispy pancake loaded with cheddar cheese and bacon, perfect for a hearty breakfast or brunch.

  • 4 large eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 2 tablespoons unsalted butter
  • Chopped chives for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, whisk together the eggs, milk, flour, and salt until smooth.
  3. Stir in the shredded cheddar and the cooked, crumbled bacon.
  4. In a large oven-safe skillet, melt the butter over medium heat until bubbly.
  5. Pour the batter into the skillet.
  6. Transfer the skillet to the oven and bake for 20-25 minutes, or until puffed and golden brown.
  7. Remove from the oven and garnish with chopped chives if desired. Serve immediately.
