A healthy twist on a takeout favorite that incorporates cauliflower instead of rice, packed with veggies and flavor.

  • 2 tablespoons olive oil
  • 1 cup diced carrots
  • 1 cup peas
  • 2 green onions, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • Optional: scrambled eggs or cooked chicken for protein

Instructions

  1. Begin by removing the stems from the cauliflower and breaking it into florets. Pulse in a food processor until it resembles rice.
  2. In a large skillet, heat olive oil over medium heat. Add the minced garlic, diced carrots, and peas, sautéing until tender.
  3. Stir in the cauliflower rice and soy sauce; cook for about 5-7 minutes, stirring occasionally until the cauliflower is slightly golden.
  4. Add the green onions and mix well. Season with salt and pepper to taste.
  5. For optional protein, mix in scrambled eggs or cooked chicken.
