A hearty Cabbage Roll Soup that transforms the classic dish into a warm, comforting meal, perfect for cold days.

Ingredients

  • 1 pound ground beef or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 head of cabbage, chopped
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups beef broth
  • 1 cup rice (uncooked)
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Brown the meat and aromatics in a large pot over medium heat for 5-7 minutes.
  2. Wilt the cabbage by adding it to the pot and stirring for about 5 minutes.
  3. Combine the diced tomatoes, beef broth, uncooked rice, tomato paste, paprika, salt, and pepper in the pot and stir together.
  4. Bring to a boil, then reduce heat to low, cover, and let simmer for 30-40 minutes.
  5. Season to taste and serve hot, garnished with chopped parsley if desired.

Notes

For deeper flavor, add Worcestershire sauce when simmering. Substitute ground beef with turkey or chicken for a leaner version. Frozen soup is great for quick meals.
