A comforting side dish of creamy mashed butternut squash infused with roasted garlic, perfect for autumn gatherings.

Ingredients

  • 1 medium butternut squash
  • 3 cloves garlic, roasted
  • 1/4 cup butter
  • 1/4 cup heavy cream
  • Salt to taste
  • Pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the butternut squash by cutting it in half and scooping out the seeds. Place it cut side down on a baking sheet.
  3. Roast the squash for 30-40 minutes, until tender.
  4. Wrap the garlic cloves in foil and roast them in the last 10 minutes.
  5. Scoop the flesh of the squash into a bowl once it’s cool enough.
  6. Add roasted garlic, butter, and heavy cream to the bowl.
  7. Mash the mixture until smooth and creamy.
  8. Season with salt and pepper to taste.
  9. Serve warm, garnished with fresh herbs if desired.

Notes

For added richness, consider using pureed sage or thyme, or substitute heavy cream with a dairy-free option like coconut cream.
