A quick and nourishing soup featuring fresh vegetables and hearty beans, perfect for busy days.

Ingredients

  • 1 can of diced tomatoes
  • 1 can of mixed beans
  • 4 cups vegetable broth
  • 2 cups chopped vegetables (carrots, celery, etc.)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine the diced tomatoes, mixed beans, and vegetable broth.
  2. Add the chopped vegetables to the pot and bring everything to a boil.
  3. Reduce the heat and let simmer for about 15-20 minutes until the vegetables are tender.
  4. Stir in the garlic powder, salt, and pepper to taste.
