A delightful mix of chewy cookies and fudgy brownies, enhanced with the nutty flavor of brown butter.

  • 1/2 cup unsalted butter, melted and cooled
  • 1/2 cup light brown sugar
  • 1/3 cup granulated sugar
  • 1 large egg, room temp
  • 1 tbsp vanilla extract
  • 1 1/4 cups all-purpose flour, spooned and leveled
  • 1/2 tsp baking soda
  • 1/2 tsp flaky sea salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup unsalted butter (for brownie layer)
  • 1/2 cup cocoa powder
  • 1 tsp vanilla extract (for brownie layer)
  • 1/2 cup light brown sugar (for brownie layer)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish to ensure that your brookies won’t stick!
  2. Mix the melted brown butter with brown sugar and granulated sugar until combined.
  3. Add the egg and vanilla extract to the mixture, whisking until smooth and glossy.
  4. Stir in the flour, baking soda, and sea salt until just combined.
  5. Fold in the semi-sweet chocolate chips.
  6. Spread the cookie dough evenly in the prepared baking dish.
  7. Melt the remaining butter for the brownie layer in a separate bowl.
  8. Mix in the cocoa powder, vanilla, and light brown sugar until smooth.
  9. Pour the brownie mixture over the cookie layer in the baking dish.
  10. Bake for 25-30 minutes, until the edges are set, but the center remains slightly gooey.
  11. Let your brookies cool before cutting into squares and serving.

Notes

Serve warm with a scoop of vanilla ice cream or a drizzle of caramel sauce. Store in an airtight container for up to a week.
