A delightful fusion of brownies and chocolate chip cookies, Brookie Bars are rich, fudgy, and irresistible.

Ingredients

  • 1 cup unsalted butter, melted
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup chocolate chip cookie dough (store-bought or homemade)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Whisk together the melted butter, brown sugar, and granulated sugar until smooth.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Combine the flour, cocoa powder, baking soda, and salt in another bowl and gradually add to the wet mixture.
  5. Fold in the chocolate chips until evenly distributed.
  6. Spread the brownie batter evenly into the prepared pan.
  7. Drop spoonfuls of cookie dough over the top.
  8. Bake for 25-30 minutes or until a toothpick inserted comes out with a few moist crumbs.
  9. Cool before cutting into squares and serving.

Notes

For an extra gooey texture, slightly underbake the brownie layer. You can substitute chocolate chips with chopped nuts or other types of chocolate.
