A delightful breakfast sandwich featuring crispy bacon, fluffy scrambled eggs, and melted cheddar cheese, all tucked into a toasted everything bagel.

Ingredients

  • 1 everything bagel
  • 2 large eggs
  • 2 slices cheddar cheese
  • 3 slices bacon
  • 1 tablespoon chopped chives
  • 1 teaspoon butter (optional)

Instructions

  1. Place bacon slices in a cold skillet. Cook over medium heat until crispy. Transfer to a paper towel-lined plate to soak up the excess grease.
  2. In a bowl, whisk the eggs with a pinch of salt until well combined.
  3. Melt the optional butter in a nonstick pan over medium-low heat. Pour in the whisked eggs, stirring gently until just set and fluffy.
  4. Toast the bagel halves until golden brown. Spread a little butter on the insides if desired.
  5. Place a slice of cheddar cheese on the bottom bagel half to let the heat from the eggs help it melt.
  6. Spoon the scrambled eggs onto the melted cheese, creating a beautiful, warm filling.
  7. Add the crispy bacon slices on top of the eggs.
  8. Sprinkle with chopped chives, then gently press down with the remaining bagel half. Serve immediately and enjoy!

Notes

For a lighter version, swap the bacon for turkey bacon or sausage. You can also add vegetables like spinach or avocado.
